Paleo Mongolian Beef n Broccoli

Mongolian Beef ‘n’ Broccoli that is Paleo and tastes just like take-out… possibly even better!

Ingredients

  • 1/2 cup Coconut aminos
  • 6 tbsp Coconut sugar
  • 2 pinches Salt
  • 1 1/2 tbsp Arrowroot starch
  • 1 tbsp Sesame oil
  • 1 pinch Chili pepper flakes
  • 1 tbsp Coconut or Olive oil
  • Salt & Pepper
  • 2 Strip steaks (or 1 1/2 pound beef chuck, but steak tastes better!)
  • 4 cups Coleslaw mix
  • 1 head Broccoli
  • 5 Scallions, sliced
  • 1 tbsp minced Ginger root
  • 2 minced Garlic cloves
  • 1 package Soba noodles (I use Soba King Buckwheat & Sweet Potato noodles)
  • Sesame seeds for garnish

Instructions

  1. In a small bowl, mix the coconut aminos, coconut sugar, salt, arrowroot starch, sesame oil and chili flakes. Set aside.
  2. Set a pot of water on the stove to boil.
  3. Heat the oil of your choice on your skillet (preferably cast-iron).
  4. While your skillet is heating, slice your steaks into bite-size strips. Season with salt and pepper.
  5. Add your steak strips to skillet and cook to desired tenderness, flipping halfway through (usually 1-2 mins per side if you like it on the medium-rare side).
  6. Remove the steak from the skillet and set aside.
  7. Meanwhile add a bit more oil to the skillet, and add your coleslaw mix, broccoli and your scallions. Cover skillet and cook until the coleslaw mix wilts and the broccoli is cooked. Usually about 3-5 minutes. Be sure to stir occasionally.
  8. Add the ginger and garlic and stir fry for another 30 seconds.
  9. Add your sauce mix and stir until the sauce thickens. Add meat and stir to coat. Turn off the heat and set the skillet aside while you cook your noodles (per the package’s instructions).
  10. Drain and then toss your noodles in a separate bowl with your saucy meat & veggies.
  11. Serve with some sesame seeds sprinkled on top.
